Woody Oven
The Panuozzo is originally a street food from Campania, the love child of a pizza and sandwich. Fill it with your choice of cheese, meat, vegetables and a whole multitude of ingredients. The bread is essentially pizza dough with no toppings, that once cooked becomes a light, airy, pillowy pocket, waiting to be stuffed with delicious fillings.
The “original” Panuozzo is filled with pancetta and mozzarella or with prosciutto ham and mozzarella or with salsiccia and friarielli (broccoli turnip greens from Campania). We recommend you to focus on traditional ingredients but, the possibilities are truly limitless, think of pizza toppings and sandwich fillings - there are literally no limits to the concoctions you could cook up.
Some left over dough or roughly ½ a 240g dough ball

Cut a 240g dough ball in half and flatten to create the basic shape of a panuozzo.
Reduce the heat in your Woody Oven to around 300°C
Cook the dough in your Woody Oven for roughly 2 minutes until the dough has risen significantly and there is some leoparding.
Slice your dough / bread in half and fill with your choice of fillings. Our recommendation is some delicious Italian ham and cheeses.
The choice is entirely yours and the possibilities are limitless, feel free to experiment with different fillings and enjoy either hot or cold.
